His presence is felt at dining options throughout Pinehurst, but The Carolina Dining Room is where Executive Chef Thierry Debailleul and his team truly shine. In this, our most spacious dining room and one of our most timeless, an amazing menu features the chef’s signature dry-rub seasoning on select aged beef, then expands out from there to include seasonal items that truly allow farm-fresh ingredients to shine.
A famous Southern Buffet is served from 6:30 to 10 a.m. daily, lunch is offered from 11 a.m. to 4 p.m. and dinner is available from 5:30 – 10 p.m. Limited menus are available in-between main mealtimes, both as a light-fare menu from 4 – 5:30 p.m. and as a late-night menu from 10 – 11 p.m. For all meals, the dress code has been relaxed to allow dress shorts in lieu of pants, but collared shirts and closed-toe shoes are still required and hats are not allowed.

A Day in Pinehurst: Chef Thierry Debailleul
As Executive Chef, Thierry Debailleul brings over 20 years of experience to Pinehurst’s culinary team. A native of France, Chef Thierry is a graduate of the “Ecole Jean Ferrandi” in Paris, where he began his journey into the art of classical and modern French cooking. His work has spanned the globe in several Michelin-ranked and Mobil-rated restaurants and hotels, including the Island of Saint Martin in the Caribbean as well as New Orleans where he worked events for groups of up to 3,500 guests.
